Ingredients

  • 350 g pasta, such as penne, fusilli, or spaghetti
  • 2 medium zucchini
  • 400 g cherry tomatoes
  • 3 garlic cloves, finely chopped
  • 1 small onion, finely chopped
  • 3 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 100 ml pasta cooking water, plus extra if needed
  • ½ teaspoon red pepper flakes, optional
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 50 g grated Parmesan cheese
  • Fresh basil leaves
  • 1 tablespoon fresh lemon juice, optional
  • Extra virgin olive oil, for serving

Preparation

Bring a large pot of salted water to a boil.

Add the pasta and cook according to the package instructions until al dente.

Before draining, reserve approximately one cup of the pasta cooking water. Drain the pasta and set aside.

While the pasta cooks, prepare the vegetables.

Cut the zucchini into thin half-moons or small cubes. Halve the cherry tomatoes.

Heat two tablespoons of olive oil in a large frying pan over medium-high heat.

Sprinkle in half of the Parmesan and toss again until the cheese melts into the sauce.

Taste and adjust the seasoning.

For a fresher finish, add a tablespoon of lemon juice just before serving.

Divide the pasta between bowls and top with the remaining Parmesan, fresh basil leaves, and a drizzle of extra virgin olive oil.
