- 1 teaspoon sugar
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
For Serving
- Fresh parsley
- Sour cream, optional
- Crusty bread, optional
Preparation
Bring a large pot of water to a boil.
Carefully remove the tough outer leaves from the cabbage. Cut around the core with a sharp knife, then lower the whole cabbage into the boiling water.
Cook for approximately three to five minutes, until the outer leaves begin to soften.
Using tongs, gently remove the softened leaves one at a time. Continue cooking the cabbage and removing leaves until you have approximately 12 to 14 large leaves.
Place the leaves on a clean kitchen towel and allow them to cool.
Trim the thick central rib from each cabbage leaf with a small knife, being careful not to cut completely through the leaf.
Preheat the oven to 180°C, or 160°C for a fan-assisted oven.
To prepare the filling, heat one tablespoon of olive oil in a frying pan.
Add the chopped onion and cook for approximately five minutes, until soft. Add the garlic and cook for another 30 seconds.
Remove from the heat and allow to cool slightly.
In a large bowl, combine the ground beef, ground pork if using, cooked rice, onion mixture, egg, parsley, paprika, thyme, salt, and black pepper.
Mix gently with your hands or a wooden spoon until combined. Avoid overmixing, as this can make the filling dense.
Place one cabbage leaf on a work surface with the stem end facing you.
Add two to three tablespoons of filling near the bottom of the leaf.
Fold the bottom over the filling, fold in both sides, then roll tightly towards the top, similar to a burrito.
Repeat with the remaining leaves and filling.
Preparing the Sauce
Heat the olive oil in a saucepan over medium heat.
Add the onion and cook for four to five minutes.
Stir in the garlic and tomato paste and cook for one minute.
Add the crushed tomatoes, stock, sugar, oregano, smoked paprika, salt, and black pepper.
Simmer for approximately 10 minutes.
Spread a thin layer of tomato sauce over the bottom of a large baking dish.
Arrange the cabbage rolls seam-side down in a single layer.
Pour the remaining tomato sauce over the rolls, making sure they are mostly covered.
Cover the baking dish tightly with foil.
Bake for 50 minutes.
Remove the foil and continue baking for another 15 to 20 minutes, until the cabbage is very tender and the filling is fully cooked.
Allow the rolls to rest for 10 minutes before serving.
