Simple Homemade Fruit Tart

A homemade fruit tart is one of those desserts that looks impressive but can still be prepared with simple ingredients and basic kitchen equipment. It combines a crisp, buttery pastry base with a smooth vanilla cream and a colourful layer of fresh fruit. The result is light, fresh, and perfect for spring or summer, although it can be adapted to suit any season.
This simple home-style version does not require complicated pastry techniques. The crust is easy to mix and press into the tart tin, while the creamy filling is made on the stove using milk, eggs, sugar, and vanilla. You can decorate the tart with strawberries, blueberries, kiwi, raspberries, peaches, grapes, or any fruit you already have at home.
A fruit tart is ideal for family lunches, birthday celebrations, afternoon tea, or a relaxed weekend dessert. It can also be prepared in advance, which makes it useful when you are expecting guests. For the best result, choose ripe but firm fruit so that the decoration remains fresh and attractive.
Simple Fruit Tart Recipe
Ingredients
For the pastry crust
- 200 g all-purpose flour
- 100 g cold unsalted butter, cut into small cubes
- 60 g granulated sugar
- 1 egg yolk
- 1 to 2 tablespoons cold water
- 1 pinch of salt
For the vanilla cream
- 500 ml milk
- 3 egg yolks
- 80 g granulated sugar
- 40 g cornstarch
- 1 teaspoon vanilla extract
- 20 g butter
For the fruit topping
- 150 g strawberries
- 1 kiwi
- 100 g blueberries
- 1 peach or nectarine
- 80 g raspberries or grapes
- 2 tablespoons apricot jam
- 1 teaspoon water
Preparation
1. Make the pastry crust
Place the flour, sugar, and salt in a large bowl. Add the cold butter and rub it into the flour using your fingertips. Continue until the mixture resembles fine breadcrumbs.
Add the egg yolk and one tablespoon of cold water. Mix gently until the dough begins to come together. Add a little more water only when necessary. Avoid kneading the dough too much, as this may make the pastry tough.
Shape the dough into a flat disc, wrap it in kitchen film, and refrigerate it for about 30 minutes.
Preheat the oven to 180°C. Lightly grease a 23 cm tart tin. Roll the chilled dough on a floured surface and place it carefully inside the tin. Press it gently against the base and sides, then trim away any excess.
Prick the base with a fork. Cover it with baking paper and add baking beans or dry rice. Bake for 15 minutes. Remove the paper and weights, then bake for another 10 to 12 minutes, until the pastry is lightly golden. Leave it to cool completely.
2. Prepare the vanilla cream
Heat the milk in a saucepan until it is hot but not boiling.
In a separate bowl, whisk the egg yolks, sugar, cornstarch, and vanilla until smooth. Slowly pour in the warm milk while whisking continuously.
Return the mixture to the saucepan. Cook over medium-low heat, stirring constantly, until the cream becomes thick and smooth. Remove it from the heat and stir in the butter.
Transfer the cream to a bowl and cover the surface directly with kitchen film. Allow it to cool to room temperature before placing it in the refrigerator.
3. Assemble the tart
Spread the cold vanilla cream evenly over the cooled pastry crust.
Wash and dry the fruit carefully. Slice the strawberries, kiwi, and peach. Arrange the fruit over the cream in circles, rows, or a simple random pattern.
Warm the apricot jam with one teaspoon of water. Brush a thin layer over the fruit to give it a glossy finish.
Refrigerate the tart for at least one hour before serving.
Conclusion
This simple homemade fruit tart is fresh, colourful, and suitable for almost any occasion. The crisp pastry, creamy vanilla filling, and natural sweetness of the fruit create a balanced dessert that does not feel too heavy.
You can easily adapt the recipe by using seasonal fruit or replacing the vanilla cream with whipped cream, lemon curd, or mascarpone. Serve the tart chilled, and store any leftovers in the refrigerator for up to two days.
