Mini Chicken Alfredo Puff Pastry Tarts

Ingredients

  • 1 sheet of puff pastry
  • 300 g cooked shredded chicken
  • 150 ml heavy cream
  • 100 g cream cheese
  • 80 g grated mozzarella cheese
  • 40 g grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 egg yolk, for brushing
  • Fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of nutmeg

Instructions

Preheat the oven to 200°C / 400°F.

Roll out the puff pastry and cut it into squares or circles. Place the pastry pieces into muffin tins, pressing gently to form small tart shells. Prick the bottom with a fork and brush the edges with egg yolk.

Bake for 10 to 12 minutes, until lightly golden.

Meanwhile, prepare the filling. In a skillet, heat the olive oil and butter. Add the onion and cook until soft. Add the garlic and stir for a few seconds.

Add the shredded chicken, cream cheese, heavy cream, Parmesan cheese and mozzarella. Season with salt, black pepper and nutmeg. Stir until the filling becomes creamy and smooth.

Remove the pastry shells from the oven and fill each one with the creamy chicken mixture.

Return to the oven for 8 to 10 minutes, until the tops are lightly golden and the cheese is melted.

Finish with chopped parsley before serving.
