- 200 g fresh breadcrumbs
- 1 onion, finely chopped
- 2 celery stalks, finely chopped
- 2 tablespoons butter
- 100 g cooked chestnuts, chopped
- 1 apple, grated
- 2 tablespoons chopped parsley
- 1 teaspoon dried sage
- Salt and pepper to taste
- 1 egg, beaten
Instructions
- Preheat the oven to 180°C (350°F).
- Prepare the herb butter by mixing softened butter, garlic, thyme, rosemary, sage, lemon zest, salt, and pepper in a bowl.
- Loosen the turkey skin over the breast gently with your fingers and rub half the herb butter under the skin. Rub the remaining butter all over the outside of the bird.
