They should begin to soften but should not become completely tender because they will continue cooking inside the galette.

Remove from the oven and allow them to cool slightly.

2. Caramelize the Onions

While the sweet potatoes are roasting, thinly slice the onions.

Heat the remaining tablespoon of olive oil in a large skillet over medium-low heat.

Add the onions and a small pinch of salt.
