Ingredients

For the roasted potatoes

  • 800 g potatoes, cut into small cubes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the taco beef

  • 500 g minced beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato purée
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chilli powder
  • ½ teaspoon dried oregano
  • 100 ml water or beef stock
  • Salt and black pepper, to taste

For the toppings

  • 200 g black beans, drained and rinsed
  • 150 g sweetcorn, drained
  • 150 g cherry tomatoes, halved
  • 1 ripe avocado, sliced or diced
  • 100 g grated cheddar cheese
  • 2 spring onions, finely sliced
  • Fresh coriander, roughly chopped
  • Lime wedges, for serving
  • Crushed tortilla chips, optional

For the creamy lime sauce

  • 150 g sour cream or Greek yoghurt
  • Juice of ½ lime
  • 1 tablespoon mayonnaise
  • ½ teaspoon garlic powder
  • Pinch of salt

Preparation

Preheat the oven to 220°C, or 200°C for a fan-assisted oven. Line a large baking tray with baking paper.

Place the potato cubes in a large bowl. Add the olive oil, smoked paprika, garlic powder, oregano, salt, and black pepper. Toss until every piece is evenly coated.

Spread the potatoes across the prepared tray in a single layer. Avoid overcrowding them, as this can cause them to steam rather than roast.

Bake for 30 to 35 minutes, turning halfway through, until golden, crisp around the edges, and tender inside.
