Traditional Easter Hot Cross Buns

Few Easter treats are as symbolic as Hot Cross Buns. Soft, lightly sweet, gently spiced and marked with their iconic cross, they have been baked for centuries to celebrate the end of Lent.

Easter Hot Cross Buns
Ingredients (12 buns)
Dough
- 500 g (4 cups) all-purpose flour
- 75 g (1/3 cup) sugar
- 7 g (2 1/4 tsp) instant yeast
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 250 ml (1 cup) warm milk
- 60 g (4 tbsp) melted butter
- 1 egg
- 1 tsp vanilla extract
- Zest of 1 orange
- 120 g (3/4 cup) raisins or currants
Cross paste
- 70 g (1/2 cup) flour
- 5 tbsp water
Glaze
- 2 tbsp apricot jam
- 1 tbsp warm water
Preparation
1. Make the dough
In a large bowl combine:
- flour
- sugar
- yeast
- salt
- spices
Add warm milk, melted butter, egg and vanilla.
Mix until a soft dough forms.
Transfer to a floured surface and knead for 8–10 minutes until smooth and elastic.
Add raisins during the last minute of kneading.
2. First rise
Place dough in a lightly oiled bowl, cover and let rise 1 to 1½ hours until doubled in size.
3. Shape the buns
Punch down gently and divide into 12 equal pieces.
Shape into smooth balls and place on a lined baking tray, slightly apart.
Cover and let rise 30–45 minutes.
4. Add the crosses
Mix flour and water to make a thick paste.
Transfer to a piping bag and pipe crosses over each bun.
5. Bake
Bake in a preheated oven at 190°C / 375°F for 18–22 minutes until golden brown.
6. Glaze
Warm the jam with water and brush over the hot buns.
This gives the classic glossy finish.
